What makes the difference? Each of the different kind of coffee beans are being roasted separately: They are slowly roasted in small batches at constant temperatures in rotating drums. Only this way each kind of coffee beans keeps its own flavor to support the final blend to the fullest: one contributes to the richness and harmony of aromatic ingredients, the other one contributes to balancing acidity, fruity overtones, body, volume and others contribute for a lasting fragrance and presence.
After roasting separately, each kind of beans are cooled down prior to mix all together to a perfect espresso bean blend. The US guideline for decaffeinated coffee requires that at least 97% of caffeine needs to be removed from the green beans. La Brasiliana uses a standard and not a just a guideline to remove 99.9% of caffeine. La Brasiliana espresso beans are 99.9% caffeine free, only 0.1% caffeine resides. This procedure takes much more time as to just put all kinds of green coffee beans together and then to roast them. But only in that way, each blend tells you it's own tale on your tongue.
Caffè La Brasiliana is a synonym for highest quality, consistent over the decades. La Brasiliana's mission is the daily commitment to produce the very best coffee blends.
The story of the Torrefazione La Brasiliana begins in the early fourties of the last century: Torrefazione La Brasiliana (torrefazione means roasting) was founded by Carlo Govoni. At that time, high end gourmet espresso coffee beans were almost vanished from Italian bars and restaurants. In 1942 Carlo Govoni realizes how strong the demand of the Italian folks was to enjoy excellent espresso again. And Carlo buys his very first second-hand coffee roasting equipment to roast the beans in the old fashioned way. Carlo exactly meets the desire of the Italian gourmets and he decides to incorporate his Torrefazione La Brasiliana. In 1948 he launches his coffee roasting plant in Ferrara, located in Northern Italy.
By the time, Carlo turns over power to his sons Corrado and Nino Govoni. The Govoni sons make important investments into technology and human resources to develop and produce the three main espresso bean blends : T, Extra and Marfisa. The sons inherite from the father his daily commitment to produce the very best Italian espresso coffee blends. Today this unique passion to stick absolutely on roasting quality is devolved to Nino's children, who became the sole owner of Torrefazione La Brasiliana: Elisabetta, Pierluigi and Giancarlo, the CEO of Torrefazione La Brasiliana.
